Summer Fruit Delight

“Watermelon” Gazpacho

1 large heirloom red tomato, pureed

1 serrano chile- cut in half

3 cups cubed fresh watermelon

2 tsp red wine vinegar

1/4 cup extra-virgin olive oil

2 tbsp minced red onion

1 cucumber -peeled, seeded, chopped

2 tbsp minced fresh dill, plus more for garnish

kosher salt and freshly ground back pepper

1/4 cup crumbled feta cheese

1/2 cup diced avocado for garnish (optional)


In a blender, puree the tomato, chile and the 2 cups of watermelon. Pour in the red wine vinegar and olive oil and pulse. Add the onion, cucumber and dill and season with salt and pepper. Puree until smooth. Pour into chilled bowls and sprinkles with minced fresh dill, feta and remaining watermelon cut in small cubes. Served 6
